A what? A Scape.

One of the most bizarre looking edibles in our backyard gardens. Posturing like a green garden flamingo.  Balancing on a leg, curling their necks upwards.

But what are they really….

Garlic scapes are the curly stalks of the garlic plant. As the stalk grows larger, it will eventually develop a flower, full of seeds. Now while the flower may be the priority for the plant (reproduction, hellooo!), most of us are more concerned by the juicy bulbs of garlic developing under ground.  To avoid this energy tug of war, we lop off the stalk (and flower) and keep the garlic focused  on the maturing bulb.

To harvest scapes, buy cutting the stem just above the first set of leaves. You can snap the scape with your fingers or use a pair of scissors.

Raw, scapes have the same peppery punch as garlic, and although now as pungent, are still very capable of making your nose run. Cooked, scape become much milder. Either way, scapes and be used in many ways.

In scape pesto, scape soup, scape pickles. Chopped instead of garlic in salads or stirfrys.

If you harvested a bit late, or they’ve been sitting in the fridge for a while, snap off the woody base of the stems—just as you would with asparagus.

Super Easy, quick, and oh so delicious:

Grilled garlic scapes, with flatbread & a sprinkled of goatcheese

Grilled Garlic Scapes
a bunch of garlic scapes
olive oil
sea salt

Drizzle oil over scapes. Toss. Sprinkle Salt.

Scatter on grill. Cook ’till nicely charrred.

Serve on top of salad or, like I did,  flatbread which you can cook at the same time on the grill.

Grilled Flatbread

2 cups spelt flour or all purpose flour (…with only rye oh hand, that’s what I used!)
1 tsp sea salt
1 Tbsp olive oil
        3/4 cup water (more or less)

***Combine flour and salt . Add oil and slowly add enough water that dough comes together into a ball.

Cover and let sit a few minutes. Divide into 2 balls. Roll out to desired thickness.

Place on a very hot grill. Wait till first side is firm and has a little color.Flip. Cook other side 1-2 minutes.

Top with garlic scapes, feta and basil. Enjoy!***  -Georgia
